DAY 49, LOADED POTATO SKINS

Crispy potato skins, filled with veggies and topped with cheese, dipped in sour cream for a perfect snack!

Ingredients

2 large 'baking' potatoes
1 tbsp olive oil
pinch salt & pepper
1 spring onion, sliced
1/4 red pepper, sliced
handful of grated cheese
2 tbsp sour cream
1 tsp snipped chives

Thread baking potatoes onto a skewer and bake in the oven @ 180ºC for an hour.

Remove from the oven and allow to cool until you can hold them.

Cut in half length wise and scoop out the potato from the centre, leaving a small margin around the edge


Cut each 'boat' in half and brush with oil on all sides. Place on a baking tray


Season with salt and pepper, fill with chopped veggies of your choice and sprinkle with cheese

Bake again @ 180ºC for 20 minutes until skins are crispy and cheese melted.

Mix sour cream and snipped chives together in a little serving bowl.
