DAY 17, CARROT CUPCAKES

Congratulations to Maddie, from Grade 7 - the winner of our VIS Bake Off. Carrot cupcakes with cream cheese frosting. 
Look at these Bunny Beauties!
Absolutely fantastic!
 Here's the basic recipe (makes 6)



for the cake mixture
 1 small carrot
1 egg
¼ cup fine crystal sugar
 cup plain flour
3 tbsp oil
1tsp baking powder
½tsp cinnamon
½tsp ginger
¼ cup raisins

for the frosting

100g cream cheese
zest 1/2 lemon
1-2 tsp icing sugar
Method
1.    Set oven to 180°C fan.
2.   Peel and finely grate carrot into a bowl.



3.   Add egg, oil and sugar and beat well.









4.   Add sieved flour, baking powder, cinnamon and ginger into bowl.

5.   Add raisins and gently mix until just combined.




6.   Put 6 paper cases in a muffin tin.

7.   Spoon mixture equally into each case. 


8.   Bake for 15-20 minutes.


    9.     Allow to cool.


10.  Mix cream cheese with powder sugar and lemon zest.

11. Decorate cooled cakes with frosting and sprinkles of your choice.




Delicious as an after school treat!
