DAY 5, BROWNIES

In response to your requests, here are my (well OK Elspeth's) famous brownies. Very indulgent, sticky in the middle and delicious served with a scoop of vanilla ice cream and hot chocolate sauce over the top!

BROWNIES

Ingredients
80g chocolate (75% cocoa solids)
120g butter
220 g fine crystal sugar
1tsp vanilla or other spice
2 eggs
80g flour
½tsp baking powder

20cm x 15cm baking tin

Hot choc. sauce
20g chocolate
 20mls milk
1tsp icing sugar



1.    Preheat oven to 170ÂșC fan.
2.    Line the bottom and top ends of tin with a strip of baking paper. Grease the long edges.
3.    Break chocolate into large bowl, add cubed butter.
4.    Place bowl over a pot of barely simmering water until melted together.
5.    Remove from the heat and stir in the sugar and vanilla.
6.    Add eggs and beat thoroughly.
7.    Sieve in flour & baking powder and fold in gently until just combined.
8.    Pour into baking tin.

















9.    Bake for 30 minutes or until well risen.
10. Cool on a baking tray.














11. Meanwhile make chocolate sauce.
12. Put chocolate, milk and sugar in a non-metallic bowl.
13. Place in the microwave on full-power for 1 minute (extra if needed)
14. Stir until smooth and glossy.


Serve with vanilla ice cream and hot chocolate sauce
