DAY 40. THAI PRAWN CURRY

This curry is the speediest one you'll ever make! Borrowed from 'The Two Fat Ladies' many years ago, it's been a godsend for many a last minute dinner! Serve with noodles.

1 tbsp oil
4 spring onions, trimmed and sliced
150g mushrooms, wiped and sliced
1 clove finely grated garlic,
1 tsp finely grated root ginger
225g raw prawns
1½ tbsp hoisin sauce
1½ tbsp oyster sauce
2 tsp Thai red curry paste
pinch Chinese 5 spice
300mls coconut milk
salt & pepper to season

Heat the pan over a medium heat. Add oil and fry mushrooms, spring onions garlic and ginger for a couple of minutes.

Add the hoisin & oyster sauces, curry paste and 5 spice. Stir well.

Pour in the coconut milk and the prawns. 

Simmer for 1-2 minutes or until prawns are pink and firm. Season with salt and pepper as required and serve on a bed of noodles!

Done in 5 minutes!
