DAY 35, TZATZIKI

200g greek yoghurt
1/2 cucumber
1-2 cloves garlic
1 tbsp olive oil
 1 tsp lemon juice
1 tsp fresh or dried, mint or dill
pinch salt and pepper

1.     Spoon the yoghurt into bowl.
2.    Cut ½ cucumber in half lengthways and scoop out the seeds with a teaspoon. Leave the skin on.


3.    Grate cucumber coarsely.


4.    Crush garlic to a very fine paste using the side of a knife.






5.    Add garlic, olive oil, lemon juice, dill or mint and salt and pepper to the bowl and mix gently but thoroughly.
Garnish with a little olive oil and fresh herbs
