DAY 34, RED PEPPER HUMOUS

Here's the blogged version of this fabulous recipe too! (and it's vegan by the way...)




2 peppers (red, yellow or green)
1 can chickpeas
zest and juice 1 lemon
1 tsp paprika
1 clove garlic
1 tbsp tahini
pinch salt and pepper



1.     Preheat the grill to maximum. Line a baking tray will aluminium foil.
2.    Cut the peppers into quarters and remove the seeds.
3.    Place the peppers on the tray, skin side up and grill for 5 minutes or until the skins are blackened.


4.    Remove from the oven and place into a plastic bag and seal.


5.    Leave for 10 minutes until cool.
6.    Meanwhile, drain the chickpeas, crush the garlic and juice the lemon.
7.    Place into a plastic jug with the paprika, tahini and pinch each of salt and pepper.
8.    Peel the skins off the cooled peppers and add them to the chickpea mixture.

9.    Blend with a stick blender to your desired consistency.
