DAY 30, ONE POT PASTA NAPOLI
One pot pasta Napoli is a good recipe for those of us that hate washing up! Cook the pasta in the tomato sauce, it takes a bit longer, but the taste is amazing!

1 medium onion
2 cloves garlic
1 tbsp olive oil
1 tin tomatoes
1 tsp mixed Italian herbs
1 pinch chilli flakes
1 pinch salt & pepper
1 tbsp tomato paste
½ tsp vegetable stock powder
400mls water (refill tomato tin)
200g dried pasta
Method
1. Finely chop onion and garlic. Fry in olive oil, over a very low heat, for at least 10 minutes until translucent and very soft.
2. Add all other ingredients - tinned tomatoes, Italian herbs, chilli, salt & pepper, tomato paste, 1/2 stock cube, pasta & water.

3. Simmer gently, covered with a lid, for 20 minutes or until most of the liquid has been absorbed.
4. Check for seasoning (consider a pinch of sugar if needed). If the pasta is still a little hard, leave the lid on, but the heat OFF for an extra 10 minutes.
Serve, garnished with fresh basil.
