DAY 8, VICTORIA SANDWICH

This is a special one for my friend Bobby. She's a brilliant cook, but says she can't make a Victoria Sandwich. Here's my version (it'll never be as good as my mum's)
By the way, I drove to Bobby's house and left it on the door step - I'm having to do quite a lot of 'ringing and running' at the moment!


Victoria sandwich



Ingredients
180g fine crystal sugar
180g room temperature butter
1 tsp vanilla extract
3 room temperature eggs
3 tbsp milk
 180g self raising flour & ½tsp baking powder
(or 175g plain flour & 2 tsp baking powder)







  1. Pre-heat oven to 1600C fan

  1. Grease and flour two 17cm round cake tins



put teaspoon of flour in the tin and tip it around, it'll stick to the butter
  1. Beat the softened butter and sugar together until it's pale and fluffy.



  1. Beat the eggs and milk with a fork in a small bowl

  1. Gradually add the beaten egg to the mixture.




  1. When all the egg had been added gently fold in sifted flour & baking powder using a metal spoon or the mixer on low speed until just mixed.







  1. Spoon the mixture into the two tins so they are roughly equal.



  1. Place in the oven for 25 minutes until golden brown


  1. Allow to cool for 5 minutes before turning out onto a cooking rack.

  1. Sandwich together with jam and freshly whipped cream. Decorate with icing sugar


put the bottom cake onto the serving dish you're going to use before you start - the jam spreads easier if you put it on the cake while it's still warm.


Still not as good as my mum's.....!
