DAY 8, VICTORIA SANDWICH
This is a special one for my friend Bobby. She's a brilliant cook, but says she can't make a Victoria Sandwich. Here's my version (it'll never be as good as my mum's)

Victoria sandwich
Ingredients
180g fine crystal sugar
180g room temperature butter
1 tsp vanilla extract
3 room temperature eggs
3 tbsp milk
180g self raising flour & ½tsp baking powder
(or 175g plain flour & 2 tsp baking powder)
(or 175g plain flour & 2 tsp baking powder)
- Pre-heat oven to 1600C fan
- Grease and flour two 17cm round cake tins
- Beat the softened butter and sugar together until it's pale and fluffy.
- Beat the eggs and milk with a fork in a small bowl
- Gradually add the beaten egg to the mixture.
- When all the egg had been added gently fold in sifted flour & baking powder using a metal spoon or the mixer on low speed until just mixed.
- Spoon the mixture into the two tins so they are roughly equal.
- Place in the oven for 25 minutes until golden brown
- Allow to cool for 5 minutes before turning out onto a cooking rack.
- Sandwich together with jam and freshly whipped cream. Decorate with icing sugar

put the bottom cake onto the serving dish you're going to use before you start - the jam spreads easier if you put it on the cake while it's still warm. |
