DAY 7, QUESADILLA
Here's a snack for you to try! I made it with the Grade 8s in our virtual classroom yesterday afternoon. Guacamole, spicy refried beans and cheese (queso!), sandwiched between two tortilla wraps and fried to melting point in the pan!
PLEASE NOTE, TURNING THEM IN THE PAN REQUIRES ADULT SUPERVISION!

QUESADILLA
Ingredients
1 onion
1 tbsp olive oil
1 clove garlic
100g kidney beans
pinch pepper and/or chili flakes
1 ripe avocado
juice ½ lemon
1 tbsp chopped fresh herbs
pinch salt
100g grated cheese
4 medium tortilla wraps
Method
1. Chop onion as finely as you can. Fry gently in olive oil for 5 minutes.
2. Add crushed garlic, kidney beans and season with a pinch of pepper and/or chilli.
3. Cook until soft.
4. Meanwhile, make the guacamole. Cut avocado in half and scoop out the flesh onto a chopping board
5. Squeeze the juice from half a lemon. Add to the avocado with the chopped herbs and a pinch of salt.
6. Mash the mixture together using a fork.
7. Spread the guacamole on to 2 tortillas. Sprinkle the bean mixture on top followed by the grated cheese.
8. Place in the same frying pan, one at a time, topping with a second wrap.
9. Fry for a couple of minutes.
10. Flip using a plate, protecting your hand with an oven glove. BE CAREFUL
11. Fry for a couple of minutes on the second side, then remove to a board.
12. Repeat with the second quesadilla.
Cut into quarters to share as a snack, or a main meal with a tossed green salad!
