MINI PAVLOVAS

These little meringue nests are another good way to enjoy all the fantastic soft fruit that's in season at the moment. This blog was inspired by this episode of Celebrity Bake Off...what could possibly go wrong?
(I used the egg whites left after making the fruit tarts earlier in the week, make sure there's no yolk in the whites or they won't aerate)

Ingredients

for the meringue
3 egg whites
150g fine crystal sugar
for the toppings
250ml whipping cream
125g fresh raspberries
for the coulis
50g frozen raspberries
1 tbsp powder sugar

Set oven to 100ÂșC fan

Put 3 egg whites into a bowl 
Whisk on medium speed to form soft peaks
Add sugar 1 spoonful at a time
Whisk to form a form firm meringue
Mark 8 x 8cm circles on a sheet of baking paper
Turn paper over and place on a baking tray
Measure meringue equally onto each circle
Shape into nests using a teaspoon, using the drawn circle as a guide
Bake for 90 mins, cool completely 
Store in an airtight tin until serving
Put frozen raspberries and powder sugar in to a non-metallic jug, microwave on full power for 1 minute
Blend to a puree and sieve to remove the seeds
Fold the raspberry coulis into whipped cream and pile on to each meringue, top with fresh raspberries!
