SPEEDY LEMON BUTTER GARLIC PASTA

As you can imagine, we don't eat many ready meals in this household. Occasionally though, I'll make a lemon garlic butter sauce around some pasta - ready in the time it takes to boil the pasta!

Ingredients

350g fresh pasta or 200g dried pasta
25g butter or olive oil
2 cloves garlic
large handful of watercress, rocket or spinach
zest and juice of 1 lemon
large pinch salt & pepper


Bring a pan of salted water to the boil


Throw in the pasta and cook according to packet instructions (fresh pasta only takes 2 minutes once the water is boiling again)


Drain and return to the pan


Add the remaining ingredients...butter, watercress....


...grate in the lemon zest


...squeeze over the lemon juice (1/2 might be enough - taste and see)


....grate in the garlic


Stir and serve


Delicious with green salad!
