DAY 57, FALAFEL

Falafel are delicious served with pita bread and hummus. Go on...make a vegan feast!

Ingredients

1 tsp ground coriander
1 tsp ground cumin
pinch salt & pepper
400g ready cooked chickpeas, drained liquor saved
1 tbsp flour
100g carrots, grated
1 fresh chilli, chopped
1 tbsp fresh parsley, chopped
1 tbsp fresh coriander, chopped
1 clove garlic, grated
zest of 1 lemon

Preheat oven to 200ÂșC fan.
Place all ingredients in a food processor
and blend, it will make a crumbly mixture.
Pour in about 50mls of the reserved chickpea liquor. The bottom half of the mixture will form into a paste.
Stir the paste and crumbly mixtures together.
Spray or brush baking tray lightly with oil

Spoon tablespoonsful of mixture on to the baking tray
Shape into flattened balls

Spray or brush falafel lightly with oil
Bake for 10 minutes, turn over and bake for a further 10 minutes
Serve with homemade pitta (day 31) and red pepper hummus (day 36).
