DAY 52, SALSA

Here in Austria, social isolation restrictions were partially lifted last Saturday, so our 'chums' came round for a feast. On the menu were, chilli sin carne (day 3), quesadilla (day 7), loaded potato skins (day 49) and today's recipe 'salsa' - a splash of colour, a sweet sour taste and a hit of cold to take the heat from the chilli - perfect!

Ingredients


4 large tomatoes
1/2 avocado
1 large red onion
2 red peppers
large bunch fresh herbs (I used coriander and parsley)
1/2 cucumber
small tin sweetcorn, drained
salt and pepper to taste
zest & juice of 1 lime
pinch sugar (optional)

The trick with this recipe is to try and cut everything the same size! I aim to make everything 'corn' sized!
Remove the seeds from the cucumber and tomatoes, so the salsa doesn't get too wet
cut the tomatoes in half this way, it makes it easier to remove the seeds
cut the seeds away from the tomato
and then scoop them out with a teaspoon


slice the tomato one way....

and then the other

...to make a fine dice

cut the 1/2 cucumber lengthwise and scoop out the seeds with a teaspoon

Roll the herbs in to tight bundle to make them easier to chop

Use the zest of the lime too, for extra flavour
zest the lime before you cut it in half
Put all the chopped ingredients together in a mixing bowl
Squeeze the lime juice over the avocado to prevent it oxidising. Season with a pinch of salt, pepper and sugar.
Mix and Serve!
