DAY 15, LENTIL SALAD

We first had this salad in a taverna in Stoupa, our favourite holiday destination in Greece. The menu described it as a 'different salad' and they were right, very different from the traditional Greek salad.
Here it is...




1/2 cup dried lentils
1 cup water
pinch salt
1 carrot, grated
1 red onion, very finely diced
large handful parsley, chopped
2cm ginger, grated to a paste
1 clove garlic, grated to a paste
zest and juice half lemon




from top to bottom, left to right
juice half lemon, zest half lemon, finely chopped red onion,
chopped parsley, grated carrot, ginger paste


  • cook the lentils in a covered pan - 1/2 cup lentils, 1 cup water, pinch salt


  • simmer gently until the water has gone and the lentils are tender (about 20-30 minutes)



  • cool and mix with the remaining ingredients and season to taste!
